YOU WILL NEED
450g/1lb baby spinach
8 tsp pine nuts, lightly toasted
sherry vinegar, to taste
light and fruity olive oil, to drizzle
Place the washed spinach with the feta, onion and pine nuts in a bowl.

HOW TO DO IT
Tip the bag of spinach into a bowl, add the toasted pine nuts and sprinkle with sherry vinegar, then drizzle with the oil, which allows the dressing to coat all the ingredients. Then serve and enjoy!
