What you need:
8 rashers of streaky bacon with rinds removed
6 slices from a large medium-cut white loaf
2tbsp cranberry sauce
2tbsp Dijon mustard
1/4 iceberg lettuce, finely shredded
8-10 thin slices of cooked turkey
4 tomatoes, thinly sliced
Mayonnaise, to serve
What you need to do:
Grill the bacon under a medium heat. When crisp, cut the rashers in half lengthways.
Flatten the bread slices with a rolling pinto make them thinner. Toast on both sides. Spread 4 of the slices with the cranberry sauce and 2 with half the mustard.
Place 2 of the cranberry sauce-covered slices on to a board and top with half the shredded lettuce, bacon, tomatoes and turkey. Lay the mustard-covered slices on top, mustard side down, then spread the bread with the remaining mustard. Top the rest of the lettuce, bacon, tomatoes and turkey. Finish by placing the remaining 2 bread slices on top with the cranberry sauce-side down.
Secure the bread layers with cocktail sticks and cut each stack into 4 triangular sandwiches.
