Is anyone else feeling a little glum at having to go back to work after the bank holiday? Rather than reaching for the take away menu to cheer yourself up, try our prawn and chicken balti. It only takes 25 minutes to make and at £2.10 per serving you’ll can treat yourself to a bottle of wine too!
YOU WILL NEED
2tbsp sunflower oil
2 large chicken breasts, diced
1 onion, finely chopped
1 red or green pepper, deseeded and chopped
2 garlic cloves, crushed
2.5cm root ginger, freshly grated
2tbsp balti curry paste
400g can chopped tomatoes
150ml fish stock
Serves: 4
Cook time: 20-25 mins
Cost per serving: £2.10
HOW TO DO IT
1. Heat the oil in a large pan and fry the chicken and onion until browned. Add the pepper, garlic, ginger and curry paste and fry for 1 min.
2. Add the tomatoes and fish stock and bring to the boil. Cook for 20 mins until the chicken is tender, then add the prawns for the last 5 mins until cooked through. Garnish with coriander.
