malteser topped cheesecake recipeYOU WILL NEED

175g digestive biscuits

50g butter, melted

300g cream cheese

200g mascarpone

400g milk chocolate, melted

For the topping:

240ml whipping cream

1/2tsp vanilla extract

40g sugar

2tbsp cocoa powder

230g bag Maltesers, chopped

25g macadamia nuts, chopped

Prep time: 20 mins

Chilling time: 3 hrs minimum

1. Crush the biscuits and mix with the melted butter. Press the mixture into the base of a 20cm springform tin.

2. Mix the cream cheese with the mascarpone. Fold the chocolate into the cream cheese mixture. Spoon into the tin, level the top and chill for at least 2 hours or overnight.

3. To make the topping, mix the cream, vanilla extract and sugar in a large bowl. Gently fold in the cocoa powder until the cream becomes marbled. Place in the fridge for 1hr, then beat the mixture until stiff before layering over the top of the cheesecake.

4. Sprinkle the top with Maltesers and macadamia nuts.
