Put a bit of zing into your kitchen with this quick and easy lemon, lime and ginger cheesecake. Ready to eat in 35 minutes for 57p per serving, it’s simply the zest!
YOU WILL NEED
175g ginger nut biscuits
75g butter
350g cream cheese
100g sugar
Grated zest and juice of 2 lemons
Grated zest and juice of 3 limes
150ml double cream

HOW TO DO IT
1. Put the biscuits into a freezer bag and using a rolling pin, crush them into crumbs. Place in a bowl. Melt the butter in a saucepan over a low heat, then, when melted, pour onto the biscuits and mix thoroughly. Press the crumb mixture into the base of a 20cm loose-bottomed flan tin.
2. Place the cream cheese in a food processor or mixing bowl. Add the sugar, lemon zest and juice and lime zest and juice. Mix thoroughly.
3. Whip the cream until soft peaks form. Fold the cream into the cheese mixture, spoon it into the tin and chill overnight until set. Before serving, decorate the top with grated lemon and lime zest.
