Recipe - double choc chunk cookies

275g margarine, softened

400g caster sugar

2 eggs

2tsp vanilla extract

250g plain flour

75g cocoa powder

1tsp bicarbonated of soda

1/2tsp salt

100g each dark, milk and white chocolate chunks

1. Preheat the oven to 180°C/Gas 4. In a large bowl, cream together the margarine and sugar. Beat in the eggs one at a time, then stir in the vanilla extract.

2. Combine the flour, cocoa powder, bicarbonate of soda and salt and slowly stir into the butter, sugar and egg mixture. Gently fold in the chocolate chunks.

3. Drop tablespoonfuls on to ungreased baking trays and bake for 8-10 mins.

4. Remove from the oven and allow to cool on the tray for 5 mins before re-moving to a wire rack to cool completely.
