These citrus chicken skewers are even more delicious when teamed with tzatziki dip. They’re quick and easy to make in 20 minutes and only £1.10 per serving
380g Diced chicken breast
Juice of 2 lemons and 3 limes
1/2 tsp ground coriander
1 tsp red pepper flakes
1 clove garlic, finely chopped
2tbsp extra-virgin olive oil
4 8-inch wooden skewers
For the Tzatziki dip
1 Cucumber, peeled, grated and squeezed dry with kitchen paper
3tbsp of Greek yogurt
1/4 small red onion, finely chopped
1 tsp ground coriander
4 cloves of garlic, minced
2tsp of distilled white vinegar
Zest and juice of 1 lemon and lime
Prep time: 15 mins
Cook time: 5-6 mins

HOW TO DO IT
1. Preheat the grill to 200oc/gas 6 and soak the wooden skewers in water for 5 minutes. Combine the lemon and lime zest and juice in a large bowl with the coriander, red pepper flakes, garlic and olive oil and marinade the chicken for at least 10 minutes.
2. Once the marinated, thread the chicken onto the skewers and pop them under the grill until the chicken is cooked through, about 5-6 minutes on each side.
3. For the sauce, mix together the grated cucumber flesh, yogurt, red onion, white vinegar, coriander and lemon and lime juices, put in the fridge to chill. Serve the citrus chicken with the tzatziki sauce for dippin’ and warm pitta breads if desired.
