YOU WILL NEED
4 small skinless chicken breasts
150ml Greek yogurt
2tbsp tikka masala paste
2tbsp sunflower oil
1 onion, thinly sliced
2 garlic cloves, finely chopped
400g can tomatoes
Fresh coriander, chopped
Naan bread and rice, to serve

HOW TO DO IT
1. Cut the chicken into chunks and place in a bowl with 2tbsp of the yogurt and the tikka masala paste. Leave to marinate for at least 30 mins or overnight in the fridge.
2. Heat the oil in a frying pan and fry the onions for 5 mins until tender, then add the garlic and fry for 1 min.
3. Add the chicken to the pan and pour over the tomatoes. Bring to the boil, then cover and simmer for 20 mins or until the chicken is cooked. Stir in the remaining yogurt. Sprinkle with the chopped coriander and serve with warmed naan bread and rice on the side.
