Stir fry is a great quick and easy meal if you’re in a rush. In just 25 minutes you can enjoy a flavoursome bowl of chicken chow mein, for £3.36 per serving.
YOU WILL NEED
150g medium egg noodles
2tsp sesame oil
300g skinless chicken breast fillets, in strips
Dash of dark soy sauce
1tsp five-spice powder
1tbsp cornflour
1-2 tbsp groundnut oil
Green pepper, sliced
150g broccoli florets
1 large spring onion, sliced lengthways
2tbsp light soy sauce
Freshly ground black pepper

HOW TO DO IT
1. Cook the noodles in a pan of boiling water for 2-3 mins until al dente. Drain and rinse under cold water, then drain again. Drizzle with 1tsp of the sesame oil and toss.
2. Place the chicken strips in a bowl and season with the dark soy sauce and five-spice. Mix well, then lightly dust the chicken with the cornflour.
3. Heat a wok until smoking and add the groundnut oil, then add the chicken and stir-fry for 3-4 mins, or until the chicken is cooked through.
4. Add the pepper and broccoli and stir-fry for 1 min, then add the spring onion and stir-fry for 30 secs. Stir in the noodles and add the light soy sauce and remaining sesame oil, and season with pepper. Serve immediately.
