What better way to eat your veg than in this delicious squash and cauliflower curry? It’s much quicker and easier than a meat curry, ready in 25 minutes at 99p per serving.
YOU WILL NEED
450g butternut squash
3tbsp vegetable oil
1 onion, thinly sliced
3cm piece root ginger, peeled and grated
3 garlic cloves, crushed
1tbsp garam masala
1tbsp ground cayenne
700ml passata
1 cauliflower, broken in florets
Fresh coriander, chopped
Rice, to serve

HOW TO DO IT
1. Peel the butternut squash and cut into 2cm chunks. Heat the oil in a large saucepan and fry the squash and onion for 5 mins until lightly browned.
2. Add the ginger, garlic, garam masala and cayenna. Fry for 1min, then add the passata. Bring to the boil and simmer for 15 mins.
3. Add the cauliflower and cook for a further 5 mins until the vegetables are tender. Scatter with chopped coriander and serve with rice.
