These quick and easy brie and mushroom parcels are a dinner party god send. Costing 98p per serving and taking only 30 minutes to make, you really will be the hostess with the mostess.
YOU WILL NEED
270g pack ready-made filo pastry sheets
25g butter, plus extra, melted for glazing
120g Brie, sliced
Makes: 4 parcels

HOW TO DO IT
1. Preheat the oven to 200°C/Gas 6. To make the parcels, cut the pastry sheets into quater. Place one piece of filo on a work surface and brush with butter. Place another piece over it at a right angle to make a cross and brush with butter again. Lay a third piece diagonally, as if you were making a star shape, brush with butter, and repeat the process until all the sheets have been used.
2. Roughly chop the mushrooms and cook in a little butter in a frying pan for 4-5 mins, season and remove from the heat.
3. Place a quarter of the Brie slices on to each filo pile, then top with a quarter of mushrooms.
4. Collect the corners of the pastry piles and join up to make a parcel. press together at the neck to seal. brush with the melted butter and bake for 10-12 mins.
