Using ready-made pastry is the key to making this asparagus and bacon tartlets recipe super quick and easy! Ready in 50 mins and at 87p they won’t break the bank either.
YOU WILL NEED
500g pack ready-made shortcrust pastry
15g smoked streaky bacon, chopped
3 large eggs
240ml soured cream
120ml milk
175g asparagus, blanched and cooled

HOW TO DO IT
1. Heat the oven to 200°C/Gas6. Divide the pastry into eight equal portions. Roll it out on a lightly floured surface and place in eight 12cm loose-based tartlet tins. Line pastry with greaseproof paper and backing beans and bake blind for 10 mins. Take out of the oven and remove the beans and greaseproof paper. Leave in the tins to cool.
2. Fry the bacon for 2-3 mins. Beat the eggs, cream and milk in a bowl. Season well.
3. Divide the bacon and asparagus between the cases, pour over the egg mixture and return to the oven for 15-18mins or until the pastry is golden and the mixture is set. Cool in the tartlet tins.
