1 large ciabatta (1 day old)

4 large tomatoes, quartered

4 figs, quartered

1 large red onion, thinly sliced

1 bunch fresh basil, chopped

4tbsp olive oil

4tbsp balsamic vinegar

1. Preheat the oven to 180°C/Gas 4. Tear the bread into bite-sized pieces. Place on a baking tray, sprinkle with water and lightly toast in the oven for 2-3 mins.

2. Toss the remaining ingredients in the olive oil and vinegar and season.

3. Add the toasted bread and leave to rest for 15 mins before serving.
