1 pinch saffron threads

2tbsp live oil

4 chicken thigh fillets, chopped into bite-size pieces

1 large red onion, chopped

1 medium red pepper, chopped

2 cloves garlic, crushed

2tbsp sweet paprika

300g paella rice

875ml chicken stock

125g frozen peas

2 medium tomatoes, peeled, seeded and finely chopped

300g medium uncooked prawns, shelled (leave tails intact) and de-vained

500g mussels, scrubbed and bearded

1. Combine the saffron and 60ml hot water in a small bowl. Leave to stand for 30 mins.

2. Heat the oil in a 40cm wide shallow pan. Cook the chicken until browned, then remove from pan. Add the onion, red pepper, garlic and paprika to the pan and cook, stirring until softened. Add the rice and stir to coat in the onion mixture.

3. Return the chicken to the pan. Add the stock and saffron liquid – stir until combined. Bring to a boil then simmer, uncovered, for about 12 mins until the rice is almost tender. Sprinkle in the peas and tomatoes and simmer, uncovered, for 3 mins.

4. Place the prawns and mussels on top of the rice mixture. Cover the pan with foil or a lid and simmer for 5 mins or until the mussels have opened and the prawns are cooked. Discard any unopened mussel shells.
