Recipe - couscous salad with feta and olives


Fancy a light dinner after a long day? Try our delicious couscous salad with feta and and olives. It can be whipped up in 13 minutes for £1.15 per serving.  


For the dressing:

2tbsp extra virgin olive oil

2tbsp freshly squeezed lemon juice

For the salad:

1tbsp extra virgin olive oil

275g uncooked couscous

Knob of butter

220g cherry tomatoes, halved

150g kalamata olives, sliced

5tbsp chopped fresh parsley

200g feta cheese, cut into cubes


Serves: 4

Prep time: 10 mins

Cook time: 3 mins

1. In a small bowl, whisk together oil, lemon juice, salt and pepper. Set aside.

2. Place the couscous in a medium-sized bowl. Cover with boiling water. Cover with a plate and leave to stand for about 3 minutes or until the water has been absorbed.

3. Uncover, add a knob of butter and fluff with a fork.

4. Pour over the dressing and toss to combine. Add the remaining ingredients and toss gently. Taste and season. Serve hot or cold.
