This deliciously fruity plum and vanilla syllabub will only cost you 70p per serving to whip up!

100g caster sugar

350g red and yellow plums, stoned and cut into thirds

2tsp vanilla extract

300ml double cream

3tbsp elderflower cordial

Zest and juice of half an orange



1.   In a pan, heat 50g sugar with 150ml water until dissolved

2.   Stir through the plums and vanilla extract and cook over a gentle heat for 10-15 mins until the fruit is soft, then leave to cool

3.   Whip the cream and the remaining sugar together to form soft peaks

4.   Stir in the cordial, the orange juice and most of the zest

5.   Spoon into glasses with the cooled compote and top with remaining zest to serve
