350g self-raining flour
2 level tsp mixed spice
175g butter, cut into pieces
150g golden caster sugar
8tbsp buttermilk
1tsp vanilla extract
415g can peaches in syrup, drained
Icing sugar

1. Preheat the oven to 190 degrees gas 5. Put the flour, spice and butter into a food processor and pulse to form crumbs.

2. Add the sugar and 3tbsp buttermilk. Pulse to make a very coarse crumble. Tip into a bowl, then put two thirds of the mixture back into the food processor and set aside the rest. Add the remaining buttermilk and the vanilla extract to the processor and blend until smooth. Spoon into a greased and lined 18x28cm cake tin and smooth the top.

3. Arrange the drained peaches evenly over the top of the mixture, then spoon over the reserved crumble, leaving some fruit uncovered. Bake for 20 mins or until skewer inserted into the cake comes out clean. Dust with icing sugar before serving.
