200g plain flour


2 large eggs

600ml milk

Drizzle of oil for frying

1. Sift the flour and a pinch of salt into a bowl. Make a well in the centre then break in the eggs. Pour in half the milk then whisk together, gradually incorporating the flour to make a smooth thick batter. Beat to remove any lumps, then stir in the rest of the milk.

2. Heat a little oil in a frying pan. Pour in 2 tbsp batter, tilting the pan until it coats the base. Cook over a moderate heat for 30-60 seconds or until golden brown on the underside.

3. Flip the pancake and cook the other side until golden brown. Slide off the pan on to the plate. Repeat to make the other pancakes.
