Ooh we can’t resist Christmas pudding come December, but if you’ve got some leftover, this is the perfect way to use it up. Something tells us these little Christmas pudding muffins will be just as popular!
YOU WILL NEED:
225g plain flour
1tsp bicarbonate of soda
175g leftover Christmas pudding, crumbled
150g caster sugar
150ml sunflower oil
2 large eggs, lightly beaten
5tbsp milk
For the icing:
200g full-fat cream cheese
50g icing sugar
Zest of 1 orange, some reserved for garnish
Nutmeg, for garnish
HOW TO MAKE THEM:
1. Heat the oven to 180/Gas Mark 4. Sift the flour and bicarbonate of soda into a bowl, add the Christmas pudding and sugar, and stir. Make a well in the centre.
2. Whisk together oil, eggs and milk. Pour into dry ingredients and stir until just combined.
3. Spoon into lined muffin tins and bake for 15-20 mins, until golden and springy to the touch. Remove from the oven, allow to cool for a few mins, then transfer to a wire rack to cool completely.
4. While muffins are baking, make the icing. Mix the cream cheese with icing sugar and some orange zest until smooth. Chill until needed and spoon over each, sprinkle over remaining zest and nutmeg.
