Here at Woman’s Own, we find it hard to choose between a cheese board and dessert. Well this clever cupcakes recipe combines the two. They also look pretty impressive as party nibbles!
YOU WILL NEED
100g melted butter
600g soft cheese
2 tbsp plain flour
250g digestive biscuits
175g caster sugar
3 eggs
400g cranberries
100g icing sugar

HOW TO DO IT
1. Cook the cranberries and icing sugar into a pan on a medium heat for 10 minutes. Leave to cool.
2. Heat the oven to 180°C/160°C/ Gas Mark 4. Line a muffin tin with 12 muffin cases. Crush up the biscuits in a plastic bad using a rolling pin before mixing with the butter. Divide between the muffin cases and flatten with your fingers.
3. Mix the soft cheese, flour, sugar, vanilla extract, and eggs in a bowl until smooth. Lightly stir in the cooled cranberry mixture. Spoon into cases.
4. Bake for 30 minutes
