1 medium onion, finely chopped

1 garlic clove, crushed

2 lean beef steaks

1 tsp vegetable stock powder

1 tbsp plain flour

1 glass red wine

1 x 400g can chopped tomatoes

100g button mushrooms

1 tbsp chopped fresh thyme

1 tbsp chopped fresh parsley, to garnish

Salt and freshly ground black pepper

1. Preheat a large, non-stick pan. Add the onion and garlic and dry-fry until soft.

2. Remove any visible fat from the steaks, then season on both sides with salt and black pepper. Add to the pan and cook until lightly coloured. Add the stock powder, then sprinkle over the flour and continue cooking for 1 minute before gradually stirring in the wine and the tomatoes, mushrooms and thyme. Reduce the heat and simmer gently for 30 minutes until the beef is tender, topping up with boiling water if required.

3. Just before serving sprinkle with the parsley. Serve with unlimited boiled or steamed vegetables (excluding potatoes).
