blackberry and almond custard tarts


These blackberry and almond custard tarts taste simply divine, and at £2.06 per serving the price isn’t bad either! Ready to enjoy in 1 hour 45



2 (25x25cm) puff pastry sheets

1 egg, beaten

For the custard:

6 egg yolks

70g caster sugar

500ml milk

2 vanilla pods, split, seeds scraped out, pods finely chopped

300g blackberries

50g flaked almonds

Icing sugar, to dust

1. Preheat the oven to 180°C/Gas 4. Cut each pastry sheet into four slices, brush with the egg, place on a greased tray and bake for 15 mins or until golden. Remove from the oven and leave to cool.

2. To make the custard, cream together the egg yolks and sugar. Place the milk and vanilla pods and seeds in a saucepan, bring to the boil and simmer for 4-5 mins. Turn off the heat and cool for 30 secs.

3. Pour the milk mixture on to the eggs, whisking until smooth, then return the mixture to the pan over a medium heat and stir for 4-5 mins until it thickens. Sieve into a jug and chill for at least an hour.

4. Top a pastry slice with custard, sprinkle with blackberries and place a pastry slice on top. Sprinkle with almonds and icing sugar.
