Mmmm, when you take these apple, golden syrup and walnut muffins out of the oven, you’ll smell why we think they’re irresistible! Ready in 35 mins, you won’t have to wait too long to tuck into them either.



300g plain flour

3 tsp baking powder

1 tsp ground cinnamon

½ tsp mixed spices

50g Tate & Lyle Fairtrade Light Brown Sugar

50g walnuts, roughly chopped

200 ml milk

5 tbsp sunflower oil

1 large egg

1 tsp vanilla extract

3 level tbsp Lyle’s Golden Syrup, slightly warmed

2 dessert apples


Makes: 10-12 large muffins

Cooking time: 20 mins



1. Heat the oven to 190C/170Cfan/gas 5. Place paper muffin cases in a deep muffin tin. Alternatively cut 12x10cm squares of parchment pepper and fit them into the tin, slightly overlapping to take on the shape and secure the base with a dab of butter to keep in place.

2. In a large bowl mix together the flour, baking powder, spices, Tate & Lyle Fairtrade sugar and walnuts. Whisk the milk, oil, egg and vanilla extract together. Peel and grate the two apples.

3. Add the liquid ingredients and warm Lyle’s Golden Syrup to the dry ingredients with the grated apples. Quickly fold together with a large spoon or spatula, but do not over-mix.

4. Spoon batter into the cases. Put the tray into the oven and bake for 18-20 minutes until risen and golden. Transfer to a wire rack to cool.
