YOU WILL NEED
175g golden caster sugar
3 medium eggs, lightly beaten
175g self-raising flour, sieved
Finely grated zest and juice of 1 lemon
4tbsp honey, plus a little extra for drizzling
1 lemon, sliced

HOW TO DO IT
1. Put the butter and sugar into a bowl and cream together until softened.
2. Gradually whisk in the eggs, then fold in the flout and add the lemon zest and juice.
3. Spoon the honey into a pudding basin and then add the mixture. Cover with a loose sheet of baking parchment and a piece of foil. Steam for 1 and 1/2 hours, topping up the water in the pan, as needed.
4. Leave for 5-10 mins. Remove the paper and foil, put a plate on the top and turn the bowl upside down to release the pudding. Decorate with lemon slices and drizzle with some honey.
