Quick and easy to whip up on a weekday, this lemon chicken with vegetable couscous takes only 15 minutes to make when you’re in a hurry! It’s the kind of fast food we love!

 

YOU WILL NEED:

4 boneless skinless chicken breasts

2 lemons

2 garlic cloves, crushed

2 x 100g packets roasted vegetable couscous

handful fresh mint

HOW TO MAKE IT:

1. Season the chicken and coat with the finely grated zest and juice of 1 lemon and the garlic.

2. Heat a non-stick pan and fry the chicken for 10 mins, turning occasionally.

3. Make up the couscous according to the instructions on the back of the packet. Squeeze in the juice of half a lemon and add a handful of chopped  mint. Cut the rest of the lemon into wedges to serve.
