French toast with berries

YOU WILL NEED

4 thick slices of brioche loaf, cut into triangles
2 eggs
120g Rachel’s Low Fat Natural Yoghurt
1 tbsp caster sugar
1 tbsp plain flour
Unsalted butter
Fresh berries
Maple or golden syrup

Serves: 2

Prep time: 5 minutes
Cook time: 5 minutes

HOW TO DO IT

1. Crack the eggs into a large bowl and whisk in the yoghurt, caster sugar and flour. Mix well until the batter is free from lumps and smooth.

2. Dip each piece of bread on both sides into the eggy mixture until it is well coated

3. Heat a knob of butter in a large frying pan until sizzling. Add 1-2 triangles of dipped brioche and fry on both sides until golden brown. Repeat with the remaining slices.

4. Serve the french toast warm with berries and syrup.
