salmon quiche


 

Enjoy a low calorie salmon and potato quiche by making a crustless version. Delicious served with salad, it’s ready in 1 hour 15 minutes. 

 

YOU WILL NEED

750g new potatoes

200g smoked salmon, cooked and shredded

5 spring onions

2 tbsp chopped dill

4 eggs

200ml crème fraiche

 

Serves: 6

Prep time: 30 mins

Baking time: 45 mins

 

HOW TO DO IT

1. After boiling the potatoes until soft, slice them and then spread half the amount along the bottom of a baking tray. Sprinkle the salmon, onion and dill on top, before adding the other half of the potato slices.

2. Add the beaten egg to the crème fraiche and then pour over the salmon and potato tower. Cover with baking parchment then place in the oven until firm.

3. Remove the salmon from the oven and allow for cooling time before serving.
